Apricot Oat Bars

We’ve been baking these oat bars for years, and they always disappear fast. The oats make them hearty, the apricot jam makes them sweet and bright, and the buttery crumble ties it all together. They’re a family favorite around here.

Prep Time: 5 minutes
Cook Time: 25 minutes, plus cooling time

Ingredients

  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • Pinch of salt
  • ½ tsp baking soda
  • ⅓ cup soft brown sugar
  • ½ cup butter, melted
  • 3 tsp vanilla extract
  • 1 cup New Canaan Farms Old Austin Apricot Jam

Serve With: Seasonal fruit

Directions

  1. Preheat the oven to 350°F. Line an 8"x8" baking pan with parchment, leaving an overhang on two sides for easy removal.

  2. In a medium bowl, combine flour, oats, salt, and baking soda.

  3. In a smaller bowl, mix together brown sugar, melted butter, and vanilla. Add this to the dry ingredients and stir until crumbly and moist.

  4. Press about three-quarters of the mixture firmly into the bottom of the pan. Bake for 12 minutes, until lightly golden.

  5. Spread jam evenly over the baked base (the recipe calls for 1 cup, but a little extra never hurts).

  6. Crumble the remaining mixture over the jam layer, then return to the oven for another 10–12 minutes.

  7. Let cool in the pan for 30 minutes, then transfer to the fridge for another 30 minutes to set. Lift out with parchment and slice into bars.
