Blueberry Banana Bread
This Blueberry Banana Bread is one of those bakes that feels both wholesome and indulgent. Made with ripe bananas, Greek yogurt, and our East Texas Blueberry Jam, it’s moist, flavorful, and perfect for after-school snacks, packed lunches, or a cozy afternoon treat. The crumble topping gives it just the right touch of sweetness.

Ingredients
- 1½ cups all-purpose flour
- ¼ cup brown sugar
- 1 tsp baking soda
- 2 large eggs
- 2–3 mashed ripe bananas
- ¼ cup plain Greek yogurt
- 1 tsp vanilla extract
- ½ cup New Canaan Farms East Texas Blueberry Jam
For the Crumble Topping:
- 2 tbsp white sugar
- 2½ tbsp flour
- 1 tbsp softened butter
Serve With: A glass of milk, coffee, or hot tea

Preheat the oven to 350°F. Lightly oil a regular loaf pan and line with parchment paper for easy removal.

In a medium bowl, mix together flour, brown sugar, and baking soda.

In another bowl, mash bananas and stir in eggs, yogurt, and vanilla until combined.

Make a well in the dry ingredients and pour in the wet mixture. Stir until thick batter forms.

Spoon two-thirds of the batter into the prepared loaf pan.

Warm jam in the microwave for 15–20 seconds, then gently spoon over the batter.

Cover with remaining batter, allowing some jam to peek through.

To make the crumble topping, mix sugar, flour, and butter with your fingertips until coarse crumbs form. Scatter evenly over the top.

Bake for about 40 minutes, or until a toothpick inserted comes out clean.

Let cool in the pan before removing, then slice and serve.
