Chicken Tortilla Soup

Whenever the weather turns cool or I just want something cozy, this chicken tortilla soup is the answer. It’s hearty and full of flavor, with just the right amount of spice from our Verde Chili Salsa. The best part is how quickly it comes together because most of the ingredients are things I already have in the pantry or fridge.

Cook Time: 10 minutes

Ingredients

  • 1 tbsp olive oil
  • 2 cups shredded cooked chicken
  • 1 (10 oz) can cream of chicken soup, concentrated
  • 1 cup chicken broth
  • 1 jar New Canaan Farms Verde Chili Salsa
  • 1 (15 oz) can sweetcorn, drained
  • 1 (15 oz) can black beans
  • Tortilla strips, fresh cilantro, and shredded Mexican cheese, to garnish

Serve With: Sour cream, tortilla chips, or warm tortillas

Directions

  1. Combine all ingredients in a large saucepan. Simmer over medium heat until the chicken is heated through and the soup is hot.

  2. Ladle into bowls and garnish with cheese, tortilla strips, and cilantro.

  3. Add sour cream, avocado slices, or cherry tomatoes on top for extra flavor.
