Cranberry Pepper Cornbread Muffins
Cornbread muffins are always a favorite at our table, and this batch has a little something special. The Cranberry Pepper Jam adds a touch of sweet and spice, and the cheddar makes them warm and cheesy. They’re quick to make and fit right in at holidays, potlucks, or an easy weeknight supper.

Ingredients
- 1 box of your favorite cornbread mix
- ½ cup New Canaan Farms Cranberry Pepper Jam
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
Serve With: Cheeses and charcuterie, or as a side to a holiday spread

Preheat the oven to 350°F (or follow the temperature on your cornbread mix instructions). Prepare the cornbread batter according to package directions.

Stir in the shredded cheddar cheese.

Warm the Cranberry Pepper Jam in the microwave for about 15 seconds, then fold it into the batter.

Spoon the batter into muffin cups set in a muffin pan. Bake for 20–25 minutes, or until golden and springy to the touch.

Let cool slightly and serve warm.
