Game Day Salsa Chicken
This is one of those set-it-and-forget-it recipes that makes life easier. A handful of simple ingredients go into the crockpot, and a few hours later you’ve got tender, flavorful chicken that’s perfect for feeding the family or serving a crowd. The beans, corn, and salsa make it hearty and colorful, while the taco seasoning brings everything together. It’s comfort food without the fuss.

Ingredients
- 1 Tbsp vegetable oil
- 8–10 boneless, skinless chicken thighs
- 1 packet taco seasoning mix
- 1 jar New Canaan Farms Cilantro Salsa
- 1 (14 oz) can black beans, rinsed and drained
- 1½ cups frozen corn
Serve With: Sour cream, avocados, and lime wedges
Directions
- Pour oil into a crockpot and place chicken thighs on top.
- Sprinkle taco seasoning over chicken. Cover and cook on high for 2 hours or low 6 hours.
- Turn chicken, then add beans, corn, and any other vegetables you like.
- Cook 1–2 more hours, depending on heat setting.
- Shred chicken with two forks. Stir in salsa until everything is coated.
- Sprinkle with cheese and serve with avocado, jalapeños, Pepper Bacon Cornbread, rice, or warm pita.
